Potato Salad
Ingredient List
- 2 lbs Marble potatoes
- ½ C Mayo
- 1 Lemon, juiced
- 2 tbsp THE Mustard
- 1 C Celery, thinly sliced or diced
- 1 tsp Sea salt
Fresh ground pepper to taste
Steps to Follow
- Place potatoes in a med pot and cover with water.
- Bring water up to a boil, add 1 Tbsp of salt and reduce the heat to a fast simmer.
- Cook potatoes until fork tender. Drain and place on a sheet tray to cool down completely.
- In a large bowl, mix the mayo, lemon juice, mustard seeds, celery and sea salt.
- Refrigerate while you cut down the potatoes.
- Once the potatoes are cooled down completely, cut in quarters and add to the reserved bowl.
- Toss gently until well incorporated and top with a little more mustard if desired.
